Pumpkin cake

Autumn is upon us and I love the sights and smells of the season. Fall means it’s time for flattering colors, slimming lines, halloween, the harvest, and BAKING!

So welcome to: Baking made easy – Part 2 (P1 was Peanut Butter cookies)

That’s right, we’re gonna make a delicious Pumpkin cake with only 3 ingredients!

… okay 6 ingredients if you really wanna make it all fancy and good.

pumpkin cake

It’s so easy! I own nothing, my roommate and my Mister don’t have any baking stuff and I was still able to make this tasty treat, no problem!

Ready? OK!

Pumpkin Cake:

Get a box mix for yellow cake. It costs like $2

Mix it together with a can of pumpkin puree and 2 eggs.

Bake at 350 for 28 mins.

The end.

Seriously. Don’t follow the cake box ingredients with the water and oil. Just mix together the dry mix, the pumpkin, and the eggs. And I know the box says you need a mixer. But that is just a big fat lie to keep the baking appliance industry alive. You only need a bowl, a spoon, and your arm.

Mix it up until the batter is all wet.

Pour it into a pan. Or two pans. Or cupcake pans. You can grease the pans if you feel like it. Or line it with parchment paper. Or do nothing. It’ll still work.

Now – the extra part to make it amazing is just as easy and uses 3 ingredients.

Apple cider glaze:

Mix together 1cup icing sugar, 3 tablespoons of apple cider, and 1 tsp of pumpkin pie spice.  The glaze tastes like an amazing apple pie. YES!

If you are too lazy to make the glaze – just use chocolate icing or melted chocolate – that will also be extra yummy.

Pour the glaze over the cake. Eat the delicious cake.

Yay for pumpkins! Autumn is deeeelicious.

Hooooray for home-made baked goods! The extra bonus to baking something yourself is that your house will smell amazing for hours! It is worth having to wash the 5 dishes that got dirty while you were making this masterpiece.

If you are having people over and want to make it seem like this was really complex and difficult – just smudge some of the icing sugar on your shirt or apron. This will translate to: “Whew! Baking is rough! But my guests are worth all the extra effort!”

—–Alternate SIMPLER version—–

Omit the eggs. Yup! You just made a 2 ingredient pumpkin cake. Yellow cake mix and a can of pumpkin. The end.

I like the eggs because it adds fluffiness and a bit of moisture – but the cake is fine without eggs. So feel free to leave ’em out…just in case you’re:

-Poor

-Grossed out by eggs

-Vegan

-Realizing halfway into making this that you don’t have any eggs

-Not authorized to buy eggs

-Against eggs and everything they stand for!

Whatever your totally valid reason may be for not wanting to use eggs. It’s ok. You don’t have to!

Enjoy your cake!

———-

And this short video.

Because this is how pumpkins make me feel too.

Peanut Butter 4 Life

You know how easy baking is? Hella fucking easy. Easier than anything else I’ve ever encountered in life.

For serious.

“But Lynn! Baking is hard! It has to be so exact!”.

No. It’s easy. Stop whining and pay attention.

I’ll prove the simplicity of baking with the guaranteed easiest recipe for anything ever:

Peanut Butter Chocolate Chip Cookies.

You only need 4 ingredients and a few minutes.

Peanut Butter – 1 c

White sugar – 1/2 c

A egg (I know I’m supposed to write “an egg” – but I like saying “a egg” and I write the way I talks. Get over it, Grammar Nazi.

A bunch of chocolate chips. Or Smarties! (The Canadian kind.  American smarties are like sweet tarts, or rockets. Don’t use those. Gross.)

Yeah – that’s all the ingredients.

Yup. No flour, or baking soda, or butter, or cinnamon, or vanilla extract, or anything. AND it’s gluten-free – just in case you have any fussy friends with diet restrictions that make you roll your eyes at the thought of feeding them.

Preheat the over to 325 (if basically the whole world runs on metric – why do we use F for baking?).

Mix together the PB, sugar, and egg.

It will seem too wet at first. Don’t worry – you probably haven’t screwed it up already. Just keep mixing until the consistency seems like the right kinda thing to make cookies.

Mix in the yummy yummy chocolate. You should probably sample a few pieces of the chocolate to make sure it’s delicious.

Make little balls of dough and put them on a cookie sheet.

This should make 24 tiny cookies or like 18 regular sized cookies.

Bake for 15 minutes.

The end.

Easy, riiiiiight? Come’on. I even taught a cute boy how to make them. And cute boys are the dumbest ;)

PB cookies

If you want the cool crisscross lines like in the photo – just press the lightly on the uncooked dough balls with a fork. Fancy!

VS: Obsessed

Do I own a million new bras? Hellz yes. Is it awesome? Hellz yes. Am I going broke? Yeah, maybe. But does this mean I am a shopaholic? Well, it depends on who you’re asking. My mom definitely thinks so; my coworkers also seem to think I have a shopping addiction. However, I tend to view it this way:

My boobs aren’t changing sizes. I can wear these things 1, 2, 5, 10 years from now. I will always need to wear a bra (unless I’m wearing a swim suit instead). Why do I need so many bras? Because, fools, I wear one every day! It’s kinda like socks for a boy. How many socks do you have? A dozen? Fifty? Fifty-dozen? Yeah, that’s what I thought.

Plus, you need a bunch of different colours, cuts, and styles to go under different tops and dresses. You shouldn’t wear a frilly bright red bra under a sheer white top. Perhaps you want something more comfortable for a long flight, marathon workday, or to workout in. Or instead you decide to go with something hot to give you a boost of confidence. And maybe you want something prettier just in case that special someone will be seeing your underwear later tonight.

Anyway – here’s the break down of what I’ve gotten so far and why.

Rad bonus #1 - on the first day – they let us have a free bra. Whooooo! I chose the:

The Very Sexy – Victoria’s Secret Very Sexy  Multiway

VS multiway

This bra I got in plain black. I wanted a new multi-way (the new term for convertible or strapless) so I could finally wear my strapless dresses. I was going to buy this one anyway because it has a super wide band lined with suede-like material. That way, when you are going strapless for hours you don’t get that painful, angry red gash along the the top of your ribcage. Hooray!

The Heartbreaker – PINK Push-up

heartbreaker

I love the bras in the PINK collection because they are marketed towards a younger crowd – so they are a little cheaper ($30-45) than Victoria’s Secret ($40-200) and they come in super fun colors and bold patterns. This bra is a deep plunge – so you can wear low cut tops and dresses without seeing the centre gore. PLUS, the one I bought is hot pink with all over lace so it’s a little bit fancier. I also have it in Royal Blue.

The Fabulous – Victoria’s Secret Push-Up

Fabulous

Okay – this is the first bra I ever bought that I thought was actually comfortable. It’s super soft and fits me just right. So right, in  fact, I bought 3 in a month. Fuchsia, Yellow, and Black. It is a cream push-up. Yep – cream. Instead of gel or foam it’s filled with cream that sort of settles to where you need it to fill any gaps and smooth you out. If you have perfectly shaped breasts…. congratulations, you probably don’t need this one. But the majority of us aren’t so blessed. Anyway, it still is ultra soft and and has fashion pleating and a fancy gold bling so you’ll still love it even if you have perfect boobs.

Dream Angels  – Victoria’s Secret Unlined Demi

Stupid unlined demi

Ten thumbs down. This looks cute – but it doesn’t give any support. It’s see thru lace…. which is why I bought it…  because some boy living on the other side of the Pacific thought it was hot. Actually, I bought two of it. The things boys make us do! Anyway – I think it sucks. The cups don’t look good on me and the underwire really digs into the old chest plate. Though I’m sure it’s fine for 32A boobs.

Buying something that sucks, twice?! Bra shopping ultra FAIL!

Victoria’s Secret Angel– VSX Sports Bra

VSX

This thing is the greatest! I was going to buy the Incredible because it looks prettier – but the straps fit too loose – which is weird because I have giant man shoulders. Anyway –  on a co-worker’s recommendation I tried the the Secret Angel and BLAMMO! So soft and comfy, with a prefect fit. It’s a super padded wired sports bra with racerback straps. Excellent support while still looking good. I got it in this bright green color that is awesome.

The Date Bra – PINK push-up

IMG_3012

OMG! And I never say that. I saw it hanging from the display rack – the cutest little hot pink number covered  all over in navy lace. Multi-colored straps. A-freaking-dorable! I couldn’t take my eyes off it! Love at first sight.

Again – a little cheaper because it’s from the PINK collection $35. Worth every penny. My boss has it too – in electric blue. The prettiest of all my bras. Ever. The picture does not do it justice. You have to see this one in real life! I will probably acquire the one that’s Grey-blue with pink as well!

The Darling Twist – Victoria’s Secret Romantic Darling Push-Up

Twist

Okay – first off – this picture doesn’t look great. Probably because the model is all boney and looks like a gross skeleton…. But don’t let that distract you from the bra!

The Darling Twist looks just like it sounds – has a cute twist shape in the  middle. Very flattering and smooth under clothes. You know that weird bra line gap between your boob and the bra. The one that always looks dumb and makes it seem like your bra doesn’t fit at all…..

bra line!

Kiss that problem good-bye with the Infinity Edge on the Twist – because it tapers off from a foam push-up to almost nothing at the top. Whooooo!

I wanted this so bad and I had to wait for TWO WEEKS until we got something in my size that wasn’t just lame old Nude Beige. Barf. Finally a lovely Silver-Grey came in! Yay!

The Close-up – Victoria’s Secret Push-up

closeup

Rad Bonus #2 -This brand new bra was released today so I was able to scoop it up for a mere $15. Whaaaaa-hoooo! It has a super wide band for comfiness and it is soft as hell. I hope the best roommate in the world enjoys it. Because it was a present just for her. Awwwwwww.

So there you have it. Am I totally obsessed? Maybe. But keep in mind I get paid to play with fancy bras all day. What did you expect would happen?

What’s next? Probably the Sexy Tee – it’s cotton – so your boobs don’t get all sweaty and it comes in a really nice Kelly Green color.

Or maybe the Body by Victoria Push-up. Not the prettiest collection of bras ever – but they are made with memory foam! I want to buy a million of them to create a foamy little sleep nest!

Or maybe the Date Bra in another colour!

Or maybe….. maybe everything. I know a motto of VS is “we have a bra for everyone“. But I think they mean: “sell to Lynn, she will buy every one. “

My favourite food

I love food. I have always loved food. I will always love food. Even when I’m sick. Even when I’m full. Even when I’m fat. Yay eating! But there are so many types of food that I love – how can I pick one as my absolute favourite?

Easy. Haven’t you ever eaten south of the border?

Hands down my favorite food used to be pizza. Because pizza is good for any time of day. A hot slice in the middle of the night, as a quick snack, add a side salad and suddenly it’s a complete meal, it’s even great served cold in the AM.

Part of why pizza is so great is because you can put anything on it! From pineapple to seafood to multiple types of meat to arugula. Vegan or lactose intolerant? Just switch out the cheese for fake cheese or omit altogether. Don’t like tomato sauce? Swap it for pesto or white sauce. Pizza is always a good choice for most everyone! Tired of pizza being the same all the time. Get a cornmeal crust. Your tastebuds will pop! Also put something weird on it – like figs and goat cheese. YUM!

pizza-brella

So what was so great it knocked amazing, delicious pizza off the top spot?

Tacos, of course.

TACO TACO TACO TACO TACO TACO TACO TACO TACO TACO TACO TACO

I always want to be eating a taco. Always.

TACO TACO

The taco has many of the same characteristics that make pizza so great. Because you can put anything on it. But you can be even more diverse with tacos – vegetables, fish, guacamole, refried beans, potato, yam, salsa, anything goes with tacos! And tacos have the same great variety with sauces, from tomato to spicy chocolate to cream; a taco can be flavour sauced with anything you want! The price range for tacos is vast and they are readily available across the Americas.

Honorable mentions for favorite foods:

Sushi – In Vancouver and Hawaii Sushi is abundant and affordable. I love sushi. Be it vegetarian, sashimi, tempura, or what have you. It can be both tasty and healthy…. or neither. The only reason it’s not my absolute favourite is because I can’t usually handle sushi in the morning. Even my very favourite – spicy ahi can be tough to take too early. A favourite food has to be something I want all the time. No matter what. Also I sometime flip flop on whether or not I should be eating seafood. If I bail on eating fish; sushi will definitely be out of the running for a fav food.

Maki-Sushi-Roll1

Dessert – A sweet treat is always welcome. And dessert is so vague it could be almost anything. A tasty cake, warm pie, chewy cookie, dark chocolate brownie, a cheese plate, a fruit tray, refreshing sorbet, creamy ice cream, gooey bread pudding, or man…. my mouth is watering! I love dessert. I tend to eat my dessert while I am making dinner – that way I am certain to get my dessert in the event of being too full after dinner. And, if I’m not too full, then I get 2 desserts! hooray! The only reason dessert isn’t the top spot is because I don’t want to be the fattest person on the planet when I grow up.

dessert!

———————————————————————

Here are some of my favourite spots for a tasty taco:

Tacofino (Tofino, Vancouver, Victoria)

Budgies Burritos (Vancouver)

La Taqueria (Vancouver)

Cactus (Seattle, Kirkland, Bellevue)

Nick’s Crispy Tacos (San Francisco)

Cha Cha Cha Waikiki  (Honolulu)

El Bosque (San Antonio) the place we used to go to with my Grandpa when we were little. My brother and I still call it El Sombrero.

My favourite pizza places:

Goldie’s (Vancouver)

Nat’s (Vancouver)

Nook (Vancouver)

Pizza My Heart (Santa Cruz)

Gotham Pizza (New York) …. or basically any place in New York.

Plan G

There are services out there to help those in need. But it’s hard to know what’s available. How would you know about something if no one tells you?

I am here to tell you that I’ve recently found out about the No-Charge Psychiatric Medication Plan (Plan G).

It’s a service provided by the BC Ministry of Health that pays for psychiatric meds. Yep – brains drugs are free for those of any age! The gov’t will cover 100% of psych meds for those who find the cost of meds to be a barrier to treatment. Yay for affordable health care to those in need!

There are 2 criteria that must be met to qualify for Plan G: Clinical and Financial

CLINICAL – you must be crazy enough that it impacts your regular life

Specifically: The patient has been hospitalized for a psychiatric condition; OR
Without the medication, the patient is likely to require hospitalization; OR
Other serious consequences are very likely (unemployment, child neglect, etc.).

FINANCIAL – you must be broke

Specifically: The patient must sign the Application for Coverage to declare that the cost of the prescribed psychiatric medication(s) is a barrier to treatment and that they have no other financial coverage for the medications; AND

The patient must be poor (income under $30,000).

Plan G is super easy to apply for and be you can easily be approved!

First of all, your doctor determines your eligibility.

When my doctor prescribed my meds I told him I wasn’t working at the moment and I wanted the cheapest medication available. He shook his head and pulled out a single sheet of paper – upon which I had to fill out two things: my name and my BC Health number. Then he faxed it off and the next day I was able to go to any pharmacy and have my prescription filled completely for free.

It is so nice to see that little spot on your receipt that says: Patient Pays and have it magically read ZERO!

yep! $0.00

100% covered without having to go through a bunch of insurance or gov’t bullshit.  You don’t have to pay up front or wait to get reimbursed weeks later. Or get audited or submit tax forms or anything. It’s freaking amazing. Plan G is extra great since doctors seem to insist you take the cadillac of drugs and are reluctant to prescribe the cheaper generic version (though both name brand and generic drugs are covered by Plan G). If approved, it lasts for a year and then after that have to re-apply.

Let’s thank the good people of the government because many people with mental problems are not able to work due to their issues. I am only a medium level of crazy – but my damn drugs would still have cost me $100 a month! I don’t have that! Or at least I didn’t before I started the meds… which btw have helped me quit drinking and get my act together enough to get 2 jobs.

Thanks Plan G! You rock!

prescription-drugs-340x227

Here is a complete listing of meds covered by Plan G

And, no, this does not mean I think medication is the solution to every little problem. I just think help should be readily available to those who need it. Canada WIN!

Finding my spirit

For a long time now I have been wondering what my spirit animal might be.

I would like to think it’s a fox. I love how they are regarded as sexy, sneaky, smart, and cunning. But I’m pretty sure calling a fox my spirit animal is just wishful thinking. A love foxes, they are beautiful, but I don’t feel a closeness with them that I think one should feel with their spirit animal. Plus, I highly doubt I am as awesome as a fox.  I’m probably something sorta lame – like a goose, a vole, an anteater, or locust.

I’m not very spiritual – so I don’t even know how to go about determining my animal.

Google search it is. Ahhhh research, you have come so far! These sites are among the top hits:

Jeri Smith – Discover your spirit animal!

Spirit Animals – How to find your spirit animal

WikiHow – How to find your spirit animal

Hello Quizzy – What is your spirit animal test

You Think – What is your spirit animal

Path of the Feather – Meeting your spirit animal

This should give me some sort of direction in my quest.

Many of the sites discuss keeping an open mind to the signs of your spirit animal trying to contact you. Because you don’t choose your spirit animal – it chooses you. The spirit animal reaches out and you have to be preceptive to notice that it’s trying to get your attention. Be it in dreams, real life interaction, or coming to you through mediation your spirit animal will keep coming to you in an attempt to draw you towards it.

If that’s the case – then my animal is probably a turtle.

SeaTurtle

Which is fine with me. I love turtles and they do seem to pop up all over my life in different scenarios. However, turtles don’t seem like something that would mesh well with my personality as they are known for patience, endurance, ancient wisdom. And I’m pretty sure I’m known for being sneaky, irrational, and moody.

So, I will move on to some of the quizzes offered on the sites. My test results are varied and wildly inconsistent. Here’s what the quizzes tell me my spirit animals are:

HAWK:

hawkflying

Hawks are the messengers of the Spirits. Adept with language, you might be a writer or a teacher (Yes). Your ability to assess situations impartially means that people often seek your guidance before making decisions (Yes). A brilliant visionary, you sometimes forget the mundane details of life like eating, sleeping, or paying bills (Never!).

FOX:

Red Fox

Foxes are clever, perceptive, and shrewd. You’re happiest working behind the scenes, pulling strings and watching others dance to your imperceptible tune (Maybe). Independent yet highly social, you glide among your circles of acquaintance with ease, sharing your sharp wit or a delicious piece of gossip (Yes).

MOUSE:

mouse

Mice represent the lowest of the noble spirits. The mouse is small and meek, and except for being cute and having a great love of cheese, they demonstrate nothing remarkable. As a spirit animal, they are not very common. (What the what?!)

RAVEN:

raven-revised

You are the adventurous, fun-loving and popular (Yes). You love big crowds and meeting new people (Sorta). You can go a bit overboard when it comes to fun sometimes though (Yes). You are sometimes thought of as the dumb or not thinking ahead one but are actually quite smart (Yes). You believe everything that anyone tells you and can sometimes get into trouble because of that (No way). You’re sexy; everybody knows your name for good reasons and bad (Yes).

Some of these animals seem right and some wrong. A mouse? Really? Pretty sure that’s the opposite of me. Screw you, Hello Quizzy!

The fox and the raven actual seem pretty close. But then again, maybe I’m just hearing what I want to hear. They have good qualities that I also would like to posses. Whether I actually have those qualities or not is highly questionable.

I guess I’ll just keep my eyes open and wait for the spirits to reach out to me. With any luck my dreams will shift from their violent focus as of late to something a little more leading and animal-filled.

Have you found your spirit animal? What is it and how did it come to you?

And now, let’s look at more pictures of those adorable animals!

And of course, I couldn’t end this without a quote from my favourite character:

In your face, Space Coyote!

VS

The new Victoria’s Secret is opening at the end of the month on Robson and Burrard. Is anyone as stoked as I am? It’s the first actual Victoria’s Secret in BC. No more trips to Seattle! No more settling for PINK at Metrotown! No more buying perfume at the airport! The Flagship store GRAND OPENING is August 27th!

I love VS they have great bras (yay for the cream filled Fabulous) and perfumes (Noir Tease is a hit with guys) – plus I love their service style: relaxed and friendly – not aggressive, overwhelming, or absentee. A lot of that comes with the fact that VS is staffed to the tits. 15 managers and 180 employees. That’s almost double what HMV had in the same building.

Of course, the space has been totally renovated. VS took over the CTV lobby and Off the Wall for Pink. They took out the high ceilings and the mezzanine. They’ve also taken out the broken escalators and put in a fancy staircase. Moved the elevator. New offices. New staff room. A stockroom that surrounds 3 sides of the lower level.

What have I learned during my week of training? Yes, week. Well, I know more about bras than I ever wanted to. I also learned that they are big on cross training. which is rad. They train everyone how to do everything. Even the dudes learn how to do a bra fitting – though they aren’t allowed to actually perform them on customers.

What am I most stoked about? Well, probably finally getting a bombshell multiway. Whats the point in having a strapless dress if you can’t actually wear it?

But I am excited for almost everything. 115 thousand boxes are coming next week to stock the store – totally necessary since it’s the second biggest Victoria’s Secret in the world. So we will be set. Let the shopping spree begin!

If you have any questions, hit me up…I probably have the answers.
