Pumpkin cake
Autumn is upon us and I love the sights and smells of the season. Fall means it’s time for flattering colors, slimming lines, halloween, the harvest, and BAKING!
So welcome to: Baking made easy – Part 2 (P1 was Peanut Butter cookies)
That’s right, we’re gonna make a delicious Pumpkin cake with only 3 ingredients!
… okay 6 ingredients if you really wanna make it all fancy and good.

It’s so easy! I own nothing, my roommate and my Mister don’t have any baking stuff and I was still able to make this tasty treat, no problem!
Ready? OK!
Pumpkin Cake:
Get a box mix for yellow cake. It costs like $2
Mix it together with a can of pumpkin puree and 2 eggs.
Bake at 350 for 28 mins.
The end.
Seriously. Don’t follow the cake box ingredients with the water and oil. Just mix together the dry mix, the pumpkin, and the eggs. And I know the box says you need a mixer. But that is just a big fat lie to keep the baking appliance industry alive. You only need a bowl, a spoon, and your arm.
Mix it up until the batter is all wet.
Pour it into a pan. Or two pans. Or cupcake pans. You can grease the pans if you feel like it. Or line it with parchment paper. Or do nothing. It’ll still work.
Now – the extra part to make it amazing is just as easy and uses 3 ingredients.
Apple cider glaze:
Mix together 1cup icing sugar, 3 tablespoons of apple cider, and 1 tsp of pumpkin pie spice. Â The glaze tastes like an amazing apple pie. YES!
If you are too lazy to make the glaze – just use chocolate icing or melted chocolate – that will also be extra yummy.
Pour the glaze over the cake. Eat the delicious cake.
Yay for pumpkins! Autumn is deeeelicious.
Hooooray for home-made baked goods! The extra bonus to baking something yourself is that your house will smell amazing for hours! It is worth having to wash the 5 dishes that got dirty while you were making this masterpiece.
If you are having people over and want to make it seem like this was really complex and difficult – just smudge some of the icing sugar on your shirt or apron. This will translate to: “Whew! Baking is rough! But my guests are worth all the extra effort!”
—–Alternate SIMPLER version—–
Omit the eggs. Yup! You just made a 2 ingredient pumpkin cake. Yellow cake mix and a can of pumpkin. The end.
I like the eggs because it adds fluffiness and a bit of moisture – but the cake is fine without eggs. So feel free to leave ’em out…just in case you’re:
-Poor
-Grossed out by eggs
-Vegan
-Realizing halfway into making this that you don’t have any eggs
-Not authorized to buy eggs
-Against eggs and everything they stand for!
Whatever your totally valid reason may be for not wanting to use eggs. It’s ok. You don’t have to!

Peanut Butter 4 Life
You know how easy baking is? Hella fucking easy. Easier than anything else I’ve ever encountered in life.
For serious.
“But Lynn! Baking is hard! It has to be so exact!”.
No. It’s easy. Stop whining and pay attention.
I’ll prove the simplicity of baking with the guaranteed easiest recipe for anything ever:
Peanut Butter Chocolate Chip Cookies.
You only need 4 ingredients and a few minutes.
Peanut Butter – 1 c
White sugar – 1/2 c
A egg (I know I’m supposed to write “an egg” – but I like saying “a egg” and I write the way I talks. Get over it, Grammar Nazi.
A bunch of chocolate chips. Or Smarties! (The Canadian kind. Â American smarties are like sweet tarts, or rockets. Don’t use those. Gross.)
Yeah – that’s all the ingredients.
Yup. No flour, or baking soda, or butter, or cinnamon, or vanilla extract, or anything. AND it’s gluten-free – just in case you have any fussy friends with diet restrictions that make you roll your eyes at the thought of feeding them.
Preheat the over to 325 (if basically the whole world runs on metric – why do we use F for baking?).
Mix together the PB, sugar, and egg.
It will seem too wet at first. Don’t worry – you probably haven’t screwed it up already. Just keep mixing until the consistency seems like the right kinda thing to make cookies.
Mix in the yummy yummy chocolate. You should probably sample a few pieces of the chocolate to make sure it’s delicious.
Make little balls of dough and put them on a cookie sheet.
This should make 24 tiny cookies or like 18 regular sized cookies.
Bake for 15 minutes.

Easy, riiiiiight? Come’on. I even taught a cute boy how to make them. And cute boys are the dumbest ;)

If you want the cool crisscross lines like in the photo – just press the lightly on the uncooked dough balls with a fork. Fancy!

My favourite food
I love food. I have always loved food. I will always love food. Even when I’m sick. Even when I’m full. Even when I’m fat. Yay eating! But there are so many types of food that I love – how can I pick one as my absolute favourite?
Easy. Haven’t you ever eaten south of the border?
Hands down my favorite food used to be pizza. Because pizza is good for any time of day. A hot slice in the middle of the night, as a quick snack, add a side salad and suddenly it’s a complete meal, it’s even great served cold in the AM.
Part of why pizza is so great is because you can put anything on it! From pineapple to seafood to multiple types of meat to arugula. Vegan or lactose intolerant? Just switch out the cheese for fake cheese or omit altogether. Don’t like tomato sauce? Swap it for pesto or white sauce. Pizza is always a good choice for most everyone! Tired of pizza being the same all the time. Get a cornmeal crust. Your tastebuds will pop! Also put something weird on it – like figs and goat cheese. YUM!
So what was so great it knocked amazing, delicious pizza off the top spot?
Tacos, of course.
TACO TACO TACO TACO TACO TACO TACO TACO TACO TACO TACO TACO
I always want to be eating a taco. Always.
The taco has many of the same characteristics that make pizza so great. Because you can put anything on it. But you can be even more diverse with tacos – vegetables, fish, guacamole, refried beans, potato, yam, salsa, anything goes with tacos! And tacos have the same great variety with sauces, from tomato to spicy chocolate to cream; a taco can be flavour sauced with anything you want! The price range for tacos is vast and they are readily available across the Americas.
Honorable mentions for favorite foods:
Sushi – In Vancouver and Hawaii Sushi is abundant and affordable. I love sushi. Be it vegetarian, sashimi, tempura, or what have you. It can be both tasty and healthy…. or neither. The only reason it’s not my absolute favourite is because I can’t usually handle sushi in the morning. Even my very favourite – spicy ahi can be tough to take too early. A favourite food has to be something I want all the time. No matter what. Also I sometime flip flop on whether or not I should be eating seafood. If I bail on eating fish; sushi will definitely be out of the running for a fav food.
Dessert – A sweet treat is always welcome. And dessert is so vague it could be almost anything. A tasty cake, warm pie, chewy cookie, dark chocolate brownie, a cheese plate, a fruit tray, refreshing sorbet, creamy ice cream, gooey bread pudding, or man…. my mouth is watering! I love dessert. I tend to eat my dessert while I am making dinner – that way I am certain to get my dessert in the event of being too full after dinner. And, if I’m not too full, then I get 2 desserts! hooray! The only reason dessert isn’t the top spot is because I don’t want to be the fattest person on the planet when I grow up.

Plan G
There are services out there to help those in need. But it’s hard to know what’s available. How would you know about something if no one tells you?
I am here to tell you that I’ve recently found out about the No-Charge Psychiatric Medication Plan (Plan G).
It’s a service provided by the BC Ministry of Health that pays for psychiatric meds. Yep – brains drugs are free for those of any age! The gov’t will cover 100% of psych meds for those who find the cost of meds to be a barrier to treatment. Yay for affordable health care to those in need!
There are 2 criteria that must be met to qualify for Plan G: Clinical and Financial
CLINICAL – you must be crazy enough that it impacts your regular life
Specifically: The patient has been hospitalized for a psychiatric condition; OR
Without the medication, the patient is likely to require hospitalization; OR
Other serious consequences are very likely (unemployment, child neglect, etc.).
FINANCIAL – you must be broke
Specifically:Â The patient must sign the Application for Coverage to declare that the cost of the prescribed psychiatric medication(s) is a barrier to treatment and that they have no other financial coverage for the medications; AND
The patient must be poor (income under $30,000).
Plan G is super easy to apply for and be you can easily be approved!
First of all, your doctor determines your eligibility.
When my doctor prescribed my meds I told him I wasn’t working at the moment and I wanted the cheapest medication available. He shook his head and pulled out a single sheet of paper – upon which I had to fill out two things: my name and my BC Health number. Then he faxed it off and the next day I was able to go to any pharmacy and have my prescription filled completely for free.
It is so nice to see that little spot on your receipt that says: Patient Pays and have it magically read ZERO!
yep! $0.00
100% covered without having to go through a bunch of insurance or gov’t bullshit. Â You don’t have to pay up front or wait to get reimbursed weeks later. Or get audited or submit tax forms or anything. It’s freaking amazing. Plan G is extra great since doctors seem to insist you take the cadillac of drugs and are reluctant to prescribe the cheaper generic version (though both name brand and generic drugs are covered by Plan G). If approved, it lasts for a year and then after that have to re-apply.
Let’s thank the good people of the government because many people with mental problems are not able to work due to their issues. I am only a medium level of crazy – but my damn drugs would still have cost me $100 a month! I don’t have that! Or at least I didn’t before I started the meds… which btw have helped me quit drinking and get my act together enough to get 2 jobs.

VS
The new Victoria’s Secret is opening at the end of the month on Robson and Burrard. Is anyone as stoked as I am? It’s the first actual Victoria’s Secret in BC. No more trips to Seattle! No more settling for PINK at Metrotown! No more buying perfume at the airport! The Flagship store GRAND OPENING is August 27th!
I love VS they have great bras (yay for the cream filled Fabulous) and perfumes (Noir Tease is a hit with guys) – plus I love their service style: relaxed and friendly – not aggressive, overwhelming, or absentee. A lot of that comes with the fact that VS is staffed to the tits. 15 managers and 180 employees. That’s almost double what HMV had in the same building.
Of course, the space has been totally renovated. VS took over the CTV lobby and Off the Wall for Pink. They took out the high ceilings and the mezzanine. They’ve also taken out the broken escalators and put in a fancy staircase. Moved the elevator. New offices. New staff room. A stockroom that surrounds 3 sides of the lower level.
What have I learned during my week of training? Yes, week. Well, I know more about bras than I ever wanted to. I also learned that they are big on cross training. which is rad. They train everyone how to do everything. Even the dudes learn how to do a bra fitting – though they aren’t allowed to actually perform them on customers.
What am I most stoked about? Well, probably finally getting a bombshell multiway. Whats the point in having a strapless dress if you can’t actually wear it?
But I am excited for almost everything. 115 thousand boxes are coming next week to stock the store – totally necessary since it’s the second biggest Victoria’s Secret in the world. So we will be set. Let the shopping spree begin!
